All good things are invented after years of hard work and undying patience. Professor Jeong S. Sim would readily agree. It took 12 arduous years to invent this designer egg. However, the result was worth the effort. Prof. Sim not only checked the declining consumption rate of eggs, he gave us a new breed of eggs that are devoid of the negative qualities of the natural eggs.


Prof. Sim is working at Nutrition and Product Technology Chair Department of Agricultural, Food Nutritional Science, University of Alberta. What prompted Prof. Sim to invent these eggs? Prof. Sim says, "we have been in designing animal products with essential nutrients with respect to modern human dietary recommendations. National Institutes of Health (Canada) suggested that the food industry be encouraged to intensify effort to develop and markets products that would facilitate adherence to the dietary guidelines or national recommended target level of essential nutrients. Thus, food production must respond to the perceived needs of consumers by producing foods that are more healthful and reflecting the national nutritional guidelines.

In addition, today's consumers are far more conscious and aware of the link between health and foods than previous generations. Although all foods provide the inherent functions of contributing aroma, taste, or essential nutrients, functional foods are those that, by virtue of presence of psychologically active components, are purported to be efficacious in the prevention and/ or treatment of disease and the promotion of optimal health" Prof. Sim feels that the designer eggs are the wave of the future. He argues that today's consumers are driving the market for a new category of foods with the potential for health promotion well beyond the traditionally recognised benefits.

Prof. Sim predicts a huge market potential for this rapidly emerging area of technology. This, coupled with the genuine concern for the people who use egg, compelled Prof. Sim to invent the designer eggs. Consequently, people all over the world stood to gain from this invention.
